California restaurateur John Pickerel made his name with his tri tip, which he chars over an open fire and then finishes in a wood smoker before serving them in hefty sandwiches. The meat, certified Angus sirloin, is aged for 21 days and rubbed in marinade before it's cooked. The classic way to eat it is on a crusty roll with au jus and caramelized onions, but you can also get it smothered with melted cheddar cheese and applewood-smoked bacon or done up Philly cheesesteak style with sautéed onions, peppers and provolone cheese. FYI: All tri tip is cooked medium rare unless you specify otherwise. Not everything is so beefy; you can also order grilled chicken, salmon and Portobello mushrooms. The restaurant itself has a suburban steakhouse feel, outfitted with masculine wooden beams, exposed brick and cushy banquettes, and hosts plenty of families thanks to extremely modest prices and a kids' menu.—Keith Wagstaff
