The baba has been made from toasted eggplant, giving it a smoky taste, and the salad of white beans called pilaki is particularly sharp and creamy. Kebab-wise, go for anything made with ground meat, especially the self-named Troy kufta, little shotgun shells-an extravagant eight to an order-exploding with beefy flavor and oozing onto the polished rice below. The cinnamony vegetarian stuffed grape leaves also glow with flavor.
