The harbinger of Downtown's recovery is not some unspeakably ugly and spindly tower, but the reopening of Bouley Bakery, and its offerings are as good as ever. The Parisian flan leads the pack, pastry-wise, a rich egg custard in a thin pie shell. While we enjoyed the gloppy skate and softshell-crab sandwiches, it was the chive-laced potato-and-walnut beet salads that left us gasping with pleasure. The restaurant in the sunny upstairs space, aptly called Upstairs, doesn't take reservations and features a sushi bar, an open kitchen, and the occasional cooking demonstration.
