Chef John Fraser's new downtown spot is the ultimate pop-up restaurant: It will cease operation after nine months and change its entire concept (menu, décor, music) every 30 days. The theme of hunting in the woods as spring emerges, for example, translates to a three-course, $58 prix fixe showcasing whimsical plates of forest mushrooms and salsify, venison tartare with saltine crackers, and stuffed brook trout with beets. Affectation runs a little high, and the décor doesn't quite reflect the cuisine, but as with most artsy installations, this restaurant makes for a good conversation piece.
