The menu of his New York flagship, located in Columbus Circle, carries hints of all of his travels, a plethora of international influences rooted in flawless French technique. Choose from a three-course prix fixe ($98) or seven-course tasting menu ($148), which includes his famous egg caviar, a creamy egg custard topped with caviar and served in the shell, and a lobster tartine bathed in a lemongrass-infused broth. Dessert isn't an afterthought; celebrity pastry chef Johnny Iuzzini works like a scientist, using all sorts of devices to alter consistencies and distill flavors. Lucky for those of us without an expense account or six-figure salary, Jean Georges has an incredibly accessible lunch deal, with two plates costing only $29 (with each additional plate costing $14.50).
