It’s ass-end sticking out into the street from a roofless cinderblock structure, Kings County Barbecue is a red van filled with cooking equipment, including a vertical pit fired with propane and wood chips. Luckily, a lot of the smoke sticks especially with the sliced brisket. Each slice includes a thick pink smoke ring, some wobbly yellow fat, and a dense smoky flavor, only slightly impeded by not quite being tender enough. The truck calls itself a Kansas City barbecue joint, and the thick spare ribs, only slightly gummed up with barbecue sauce, are indeed like ones we've had in K.C. Sides includes meat-dotted barbecued beans, very chunky cole slaw, pickle chips, white bread, and some wonderful cheese grits goosed up with jalapeno. Call ahead – sometimes the truck migrates to other Brooklyn locales.
