Make sure you get the double-tortilla soft ones (instead of the hardshell variety) and the waitress will respect you. The cow tongue in the lengua taco is stewed to perfection, liberally dusted with crumbly cheese and cilantro; the barbacoa-braised and pulled goat-taco is even better, with an additional dab of crema.
