This sprawling Mexican restaurant in Murray Hill’s Pod39 hotel looks chaotic, but the kitchen is under the control of April Bloomfield and Roberto Santibanez. The duo collaborated well, resulting in classic dishes like ceviche, suddenly dressed up with light apple chips, tucked in layers of crisp chicharron. Order plenty of tacos--the tortillas are pressed throughout the day with fresh masa from Queens--and the toppings of pork shoulder cooked traditionally on a spit, fried sweetbreads, or roasted cauliflower, don’t disappoint. If you really want to feel like you’re on vacation (like the suitcase-pulling guests moving through the lobby) go for an ultra-boozy horchata spiked with coffee, served in a colorful ceramic parrot.
