Go for the salta at this venerable Yemeni eatery: One of the most popular Yemeni dishes, it arrives at the table in a hot iron pot, the reddish broth within bubbling fiercely. The hearty potage is thickened with mashed vegetables like potatoes, carrots, and okra, flavored with the bitter green fenugreek, and enriched with bits of lamb. A giant round of bubbly, char-spotted flatbread comes alongside, and is wonderful dipped in the stew. As an appetizer, you can't do better than fassolia, a delicious dish of white beans cooked with tomatoes, onions, and optionally, egg. It tastes like much more than the sum of its parts.
