The little shop on the Lower East Side offers a small menu of grilled cheese sandwiches, from singles with bacon to ricotta with merguez. Right now, as the weather cools off a bit, it's just the right moment to welcome a sweet-savory number that hints at fall: Asiago, Parmigiano, a bright mash of butternut squash, and sage-scented brown butter, all in two crisp and golden slices of peasant bread. It looks pretty lean, but it's a hefty, satisfying sandwich, and it leaves your fingers shining with butter.
