Matthew Lightner's multi-course ode to foraging plays carnivorous mind tricks with surprising and tasty results.

At first glance, Matthew Lightner and his foraging ways appear to be ripe fodder for a Portlandia sketch (the chef previously cooked in that city), but as soon as food starts hitting the table, it's clear that the genial--albeit serious--procession of over 20 courses is a thought-provoking, worthwhile splurge. However, if Atera shares one connection with the cheeky IFC show, it's the restaurant's playfulness. In addition to chicken soup with cuttlefish noodles and razor clam sandwiches served on bread colored to look like the bivalve's shell, Lightner dazzles with a snack of bone marrow that eschews the bone entirely. Hearts of palm stand in for nature's most badass serving dish, proving equally as entertaining to eat. The snappy half-pipes cradle their creamy bovine innards; their flavor lent profound depth from a bit of grill char. Perhaps this explains why the kitchen's umami overhaul--pairing already unctuous marrow with luxurious béchamel--feels balanced rather than weighted down by too many rich ingredients. For those looking to dip their toe into the mad forager's forest, Atera offers this marrow à la carte in its downstairs lounge.
