Calexico's Baja Fish Taco, One of Our 100 Favorite Dishes

No. 72: Baja fish taco from Calexico

Aptly named for one of the California-Mexico border crossings, this cart-spawned mini-chain does a booming business in California-style Mexican food paired to frozen margaritas. The Baja fish taco is, by far, the best thing on the menu: Built on a pair of warm corn tortillas, fat hunks of crispy, beer-battered white fish are drizzled with a chipotle-imbued crema and topped with tart, juicy mango salsa and fresh, peppery cabbage slaw. Each bite is savory, piquant, acidic, and slightly sweet, a balanced harmony enhanced by the rich textural play of all elements. And while every outpost of Calexico adheres to the same recipe for this Southern California staple, we daresay the Greenpoint outpost does this taco the very best.
