No. 91: Octopus salad from Calliope

You'll likely traipse through the pâtés, terrines, and egg mayonnaise at this charming East Village French bistro run by Eric Korsh and Ginevra Iverson, but don't skip ahead to your roasted chicken or lamb neck (and, eventually, your baba au rhum) before trying the octopus salad. Supple cuts of octopus both taut and tender mix with disks of soft fingerling potatoes and long, snappy green beans in a bright, thick vinaigrette imbued with lemon and lifted with a faint hit of Dijon mustard. A filleted silver anchovy finishes the plating and adds flavors of brine and sea to the first few bites.
