Cho Dang Gol's Spicy Galbi Jjim, One of Our 100 Favorite Dishes

No. 63: Spicy galbi jjim from Cho Dang Gol

This K-Town Korean joint specializes in tofu, and it serves a particularly silken version cut into slices or mixed into stews, where it sops up flavor from pork, vegetables, and spicy orange broth. That tofu is worth your attention, but so is a more carnivorous offering: the spicy galbi jjim. Hunks of soft, jiggly shortrib--shot through with rich fat and braised until soft--swim in a sweet-savory broth spiked with angry looking (but mostly mild) burgundy colored chilies. The stew is filled out with chewy rice cakes, slices of squash, and crowning thatch of egg that's been griddled like an omelet and cut into thin shreds. You'll want rice to mop up remaining juices, and maybe a little makgeolli, a fruity and lightly effervescent Korean rice wine served in a bowl, to wash it all down.

Later this year, we'll pen our Best of New York issue, our annual love letter to what's great in this town. When that paper hits the streets, you'll find our picks for the very best this city has to offer when it comes to dozens of cuisines, restaurants, dishes, and drinks. Until then, you can get a taste of our contenders as we count down, in no particular order, our 100 favorite dishes from around the boroughs, a list of laudable eats worth tracking down right now.
