Chuko Eyes March as Opening Date for Bushwick Outpost

The owners of Prospect Heights ramen shop Chuko and nearby izakaya Bar Chuko have had a Bushwick ramen outpost in the works for more than a year. But if all goes to plan, they should finally pull the paper off the windows and make their debut in March.

"We'll be going to the next level," says Jamison Blankenship, who co-owns the spot with James Sato and David Koon. "There will be more ramen options, more appetizer options, and things we've been working on at Bar Chuko."

The new address, at 144 Evergreen, was most recently home to Evergreen Ice Cream, and features a backyard plot where the Chuko crew hopes to erect a beer garden. "We'll do some yakitori out there, some $1 skewers," says Blankenship. "It'll be a little too loud and a little too warm."

The guys also plan to offer delivery from their new shop, and they'll be open from noon until midnight without a break (Prospect Heights closes between lunch and dinner).

Despite the expansion of the menu here, Blankenship says the new spot will follow the same feel as the original. "We want to be the Levi's of ramen shops, with a very comfortable, timeless quality," he says.

And flagship favorites, like the vegetarian ramen, will find a home here, too.
