Dish No. 35: Hako-Zushi at Hasaki

Today's pick: Hako-zushi ($11) at Hasaki (210 East 9th Street, 212-473-3327)

Sushi as we know it began in the mountains southwest of Tokyo as a means of preserving fish by fermenting it on a bed of rice. Gradually, this evolved into the "finger sushi" and maki rolls we enjoy today.

But there was a midpoint between these two forms, known as hako-zushi ("box sushi") or oshi-zushi ("pressed sushi"). Vinegared rice is placed in a box, topped with fish and, sometimes, herbs or vegetables, and the lid is pressed down, making for a pleasing compression of the ingredients. The finished product is then cut into bite-size pieces.

Pressed sushi is available as a sort of novelty at only a couple of Japanese restaurants in town, including Hasaki, a walk-down spot just off Third Avenue in the Japantown section of the East Village, with a choice of either mackerel or salmon.
