Today's pick: Veal chop smoked in hay ($45) at Eataly's Manzo.

When it sails into view, it provokes awe: a cudgel-size veal chop with a long bone protruding, guaranteeing you'll be picking it up with your hand and gnawing the chop like a gnu. A couple of stalks of broccoli rabe discreetly hide part of the chop, which is so big you'd better share it with a friend. Of course, the steep price tag suggests the same thing.
The chop rests in an herbal broth, and squat matchsticks of pancetta and creamy white beans lie strewn around, making a very artistic picture on the plate. The hay confers a mild smoky flavor, but even more important, it conveys the impression that the dish is not far from its barnyard origins.
