Today's pick: The spinach pie at Paradis To-Go (114 Fourth Avenue, 646-416-6709).

Paradis To-Go is a veritable lunchtime utopia for workers in the vicinity of Union Square, offering a rotating selection of fresh salads, sandwiches, soups, and pastries. And on certain, very special days of the week, its menu includes a superlative spinach pie.

While its size is impressive -- it's substantial enough to replace a flat tire on a Vespa -- the pie's true beauty can be found in its construction. Shiny, crackly layers of filo dough are crammed full with carefully seasoned pureed spinach and dusted with dried herbs that taste strongly of oregano. The pie can be torn apart soft-pretzel-style, making it that much easier to appreciate the texture of the filo, which sheds fat, flaky shards that demand to be salvaged and gobbled up, regardless of whoever's watching.

Just as paradise can be difficult to find, so can the spinach pie -- while it tends to be available on Mondays and during the weekends, call ahead to make sure it's on the menu.
