Today's pick: Spicy miso ramen ($10.50) from Ramen Setagaya.

This is a very fine bowl of ramen all around, but it's the broth that makes it one of our favorite dishes -- brick-red, zipped with plenty of chile, the miso base adding salty, nutty heft and backbone. It's deliciously full-flavored: hot but not incendiary, habit-forming. If some ramen broths are long-simmered and subtle, this one practically smacks you over the head.

It floats with cabbage; bean sprouts; slices of bamboo; tender pork belly; an egg with luscious, barely cooked yolk; and a handful of corn, which adds its sunny sweetness to the spicy bowl. And, of course, underneath all that, there is a heap of ramen, the yellowish noodles pleasantly al dente.
