Smoking is a trend that's been, ahem, gathering heat over the past year, and doesn't look like it's going to flame out anytime soon. On Monday, January 4, the good folks at Beer Table will celebrate the craft with a discussion and tasting led by Chris Munsey, a former cheesemonger a Murray's who can currently be found behind the counter at Dickson's Farmstand Meats.
The event will include a description of the smoking process and the history of smoked foods, as well as a discussion about preservation. All of which is well and good, but it'll most likely be the smoked food -- Fiore Sardo, a Sardinian sheep's milk cheese, and smoked beef tongue from Gabriel Ross -- all washed down with Rauchbier, that's going to inspire would-be attendees to spend $35 on tickets, which can be purchased here.
