From a case of worthy sweets, these macarons rise to the top--particularly when we're talking about the pistachio variety.
Remember when macarons were totally going to be the new cupcake? We're not exactly sad that it never happened--the pastry is hard to master, and there are so many shoddy versions out there that the treat is often a let-down. One notable exception is the cookie from Financier, a patisserie that launched on Stone Street and grew a multi-location empire in Manhattan thanks to the strength of its cases full of sweets. A crisp, paper thin shell gives way to the rest of the chewy-centered cookie until it ends in a creamy bit of ganache or buttercream, depending upon what you've ordered. We're partial to the pistachio, its sweetness tempered by earthy nuttiness, but truly, give us a cup of coffee and we could stand in front of that case and eat our way through each variety.
