Fletcher's Brooklyn Barbecue's Chili Mac, One of Our 100 Favorite Dishes

No. 78: Chili Mac from Fletcher's Brooklyn Barbecue
We're all about to cut loose and celebrate our fair nation's birth, so it seems only appropriate that we highlight an all-American dish for the occasion. Fletcher's boasts several solid barbecue options and accoutrements that would do the patriotic trick--including some wacky choices, like Kool-Aid-imbued pickled watermelon rinds--but the chili mac rises to the top of the heap. Elbow macaroni are coated in creamy orange cheese sauce, a throwback to a childhood treat our moms rarely let us order. It's elevated to align with adult standards by a healthy shot of hearty beef chili, the tender cubes of meat and earthy, lightly-spiced stew adding nutrition and substance in addition to flavor. Make it a dish no kid would touch by adding as much racy green chile, which the restaurant serves on the side, as your sinuses can handle.
