Frankie's 457's Eggplant Marinara: Vegetarian Delights of NYC
Meatless lunch extraordinaire
Frankie 457 is rightly known for its meatballs, but it also serves a number of vegetarian dishes, including this eggplant marinara and mozzarella sandwich, on buttery focaccia from Grandaisy Bakery.
What sets this sandwich apart is that it is fresh and vegetal, bearing no resemblance to eggplant Parmesan. The eggplant is sliced rather thickly, not breaded, and cooked to tenderness in a deeply savory tomato sauce. Two smallish orbs of mozzarella add a judicious hit of milky richness. And the bread is no afterthought. Chewy and light, its craters soak up the sauce.
