One of the best dishes on chef Rene Stein's beer-centric menu is also one of the most straightforward.

Over the summer, Upper East Side Czech restaurant Hospoda tapped Seäsonal vet Rene Stein to spearhead a menu overhaul focusing on all things beer, and although we lament the loss of some of the restaurant's more traditional offerings, Stein's menu can be incredibly fun. Beer-based dishes can be found in nearly every course, but the fizzy beverage makes its biggest mark during dessert. A tempestuous--if precious--bowl of three battered and fried cherries sitting in dark beer foam commands attention with its undercurrent of nutty tonka beans. The malty, sweetened bubbles add a yeasty punch, and it's here that the restaurant's new suds-centric concept is best exemplified. If we'd known beer foam could taste this good, we'd have stopped complaining about heavy-handed tap pours at bars years ago.
