No. 75: Dan Dan Noodles from Legend
This Chelsea Chinese joint turns out one of the most formidable selections of Sichuan fare this side of Flushing. And while we're fans of just about anything on the menu that promises a hit of addictive mouth-numbing Sichuan peppercorns, we're so partial to the dan dan noodles, we order the dish as a starter every time we stop through. A tangled nest of Sichuan-peppercorn-dusted noodles sits in a pool of chile oil, waiting for a quick turn with a pair of tongs. Giving the strands of pasta a liberal but even coating of all ingredients optimizes bites, which slowly build in intensity until your face tingles. Legend offers both a vegetarian and a pork-studded version of this item; we prefer the latter for the savory, herb-tinged flavor balance as well as the added heft. Either way, you're going to want a sweet, cold Coke to put out the fire.
