Tien Ho flirts with showmanship for this breathtaking share plate that easily feeds three.

Under Tien Ho, Montmartre puts out well-dressed bistro fare that does indeed boast Asian flair (Vietnamese, specifically). The restaurant's best dishes convey a balance of French and Vietnamese elements, and there may be no better representation of Ho's storied talents than the massive pot-au-pho. Upon receiving the wide basin of soup ingredients, it's impossible to ignore the Flinstonian beef rib taking up an entire side of the bowl; thick slabs of juicy short rib stacked across the bone are sheltered by herbaceous tufts of Thai basil and cilantro. Lining the bottom you'll find shreds of oxtail and rosy slices of raw sirloin, leeks, carrots, cipollini onions, a hunk of potato, a scattering of bean sprouts, and a marrow bone. The scene is almost barbaric, and then: rich oxtail broth is poured into the bowl, wafting aromatics and gently cooking the sirloin. Add a few spoonfuls of spicy hoisin and stir everything together. Between sips of soup, snag a piece of short rib and watch as it succumbs to a single swipe of the Laguiole knife. This is some primal fine dining.
