More Birdbaths Are on Their Way

Although he's closing his Los Angeles outpost of Birdbath, Maury Rubin is doubling the number here in New York.

Florence Fabricant brings word that Rubin, who currently has three Birdbath locations here, will open three more in the fall. He's planning bakeries at 200 Church Street in Tribeca, at 35 Third Avenue (in NYU's Alumni Hall), and in the New Museum, where City Bakery will provide catering.

All of which means that Lower Manhattan will soon be a hotbed of smoked tofu sandwiches and old-school vegetarian cuisine. Hooray!
