Q&A: Chef Suzy Singh on Her Favorite NYC Restaurants, Part 2
Yesterday we spoke to Master Chef contestant Suzy Singh about what it's like being a minority in the food world and how she incorporates Indian and French cooking technique in her recipes. We're continuing the conversation with Singh, chatting about her upcoming projects and her favorite spots to visit when she's in New York City.
Tell us about your upcoming projects.
There are a couple of them. There's an underground supper club on December 8 for 100 people. It's actually going to be a fusion of classic French technique and Indian cuisine. We're also starting a food truck in March of 2013, and I'm working on teaching more at Le Cordon Bleu.
You ran a food truck right after culinary school. How did that happen?
Right after I was done with culinary school, I actually ended with Master Chef, which was my externship program. The exposure that I got from the show was a good transition in starting the food truck. It was pretty awesome. I ended up making my own pastry dough and stuffing them with Indian curry and it turned into this huge phenomenon.
We know you're based in Chicago, but what are your favorite places to hit up when you're in New York City?
Any words of advice for aspiring cooks?
I really want people to get the experience that I had because it has definitely changed my life. I used to work in neurosurgery, then I went to culinary school. I'm happier than I've ever been now, all because of one cooking class. It literally changed my life. If people have that opportunity, they should definitely take it.
