Recipe: Beet Gazpacho from MyMoon Restaurant

Check out this delicious beet gazpacho recipe from MyMoon. Based in Brooklyn, MyMoon is a Spanish tapas joint with a Mediterranean vibe. Their beet gazpacho with shrimp goes for $12 at the restaurant.

Beet Gazpacho with Shrimp and Pistachios Serves: 8 Ingredients: 2 red beets, boiled 4 plum tomatoes 1 cucumber 1 red pepper 1 garlic clove 2 tablespoons of sherry vinegar 10 tablespoons of olive oil 8 shrimp, cooked 1 blood orange, sliced into 8 segments Zest of 1 lime ¼ cup toasted pistachios Sea salt Pepper

Directions: Puree the beets, tomatoes, cucumber, red pepper and garlic clove in a blender. Mix in vinegar, olive oil and sea salt to taste Divide into 8 bowls. Place one shrimp in each bowl. Garnish with orange slice, lime zest, and toasted pistachios. Add fresh pepper to taste.
