Salt & Fat's "Shaved" Hudson Valley Foie Gras, One of Our 100 Favorite Dishes
Dish no. 43: "Shaved" Hudson Valley Foie Gras from Salt & Fat (41-16 Queens Boulevard, Sunnyside; 718-433-3702)
Those fluffy tan snowflakes you see in the photo there are actually shavings of rich Hudson Valley foie gras, rendered light and feathery, cloaking a heaping mound of cinnamon-dusted mandarin orange segments, which explode with sweet, tangy bursts of fresh juice over paper-thin stained-glass tiles of bacon brittle. "Growing up, I used to love canned mandarin oranges -- they were my shit," explains chef-owner Daniel Yi. "As a line cook, I fell in love with foie gras the first time I had it. I figured why not take some of my fondest food memories growing up and compose it into a dish -- and the foie gras dish at Salt & Fat was born."
