Dish no. 2: Kothu roti from Sigiri (91 First Avenue, 212-614-9333)

If you're relatively unfamiliar with Sri Lankan food, Sigiri is a great place to leave your meal in the hands of your server -- the menu here isn't terribly descriptive, and the staff is adept at navigating the dishes so that you skip the relatively boring chicken curry for, say, the much more interesting pork black curry. You'll almost certainly be guided toward the kothu roti, too; the dish is ubiquitous in Sri Lanka, which makes it a must-order if you're trying to familiarize yourself with the cuisine. The version here is stellar: Bits of chopped-up flatbread are tossed with egg, vegetables, and your choice of chicken or beef (we'd go for beef, though you can also order a vegetarian version). The mixture is cooked on a hot sheet, so that the edges of the bread are slightly crisped. It's served with a thin savory and spicy broth you should drizzle over the top. Sigiri is BYOB, so if you're interested in a pairing, you'll need to pick it up before sitting down.
