The Musket Room's Steak and Cheese Pie, One of Our 100 Favorite Dishes

No. 77: Steak and cheese pie from the Musket Room
New Zealand native chef Matt Lambert re-imagines a number of his home country's comfort food classics for the menu at his recently opened Musket Room, and the most successful of these redesigns is the steak and cheese pie. The plate is pooled with savory jus, dabbed with rich, creamy taleggio, and piled with tender, succulent chunks of steak mixed with two kinds of parsnips, the first crisp and fresh, the second tartly pickled. The dish is crowned with a wafer-thin disk made of crumbly, buttery pastry crust, best integrated into each bite.
