All About Technique: Fish Butchery, Institute of Culinary Education, 50 West 23rd Street, Saturday, 10 a.m.

Students can learn how to properly gut gilled creatures of all shapes and sizes during this four-and-a-half-hour class. An instructor will also cover common cooking techniques, such as en papillote, sautéing, and frying, and attendees will make sautéed fillets of sole à la Meuniere, fish stock, and more. Reservations are $120 and can be secured through the ICE website.

A New Year's Healthy Brunch with VEGA, Whole Foods, 95 East Houston Street, Saturday, 11 a.m.

Led by holistic nutritionist Peggy Kotsopoulos, this class will cover healthy brunch options. Attendees will learn recipes for dishes like cinnamon-raisin french toast, amaranth-hazelnut chocolate chip breakfast muffins, and a special wake-up "frappucinno" without the calories. Reservations are $10.

Seventh Annual Cassoulet Cook-Off, Jimmy's No. 43, 43 East 7th Street, Sunday, 1 p.m.

The seventh annual cassoulet cook-off hits the East Village this weekend, celebrating the famed French winter casserole. Guests can sample over ten different styles of cassoulet from both amateur and professional chefs. One American beer, wine, or cider is included in the $30 ticket price.

Wine on a Budget: Blind Tasting, New York Vintners, 21 Warren Street, Sunday, 4 p.m.

If your mission for 2015 is to find a tasty wine at an affordable price, this class, which features a sommelier and money coach, is worth considering. Wine enthusiast Hillary Zio will lead a tasting of five wines, and Ashley Feinstein will cover how best to manage your grape addiction when it comes to cash. The event also includes appetizers to pair with each wine. Advance tickets start at $42.63.

Enjoy an evening of chamber music along with a prix fixe dinner at this traveling concert series, which features the Dover Quartet performing a selection of classics during courses. The offer includes an amuse-bouche, a main course, a dessert, and drinks; guests also have time to meet the group afterwards. Tickets start at $25 for general admission; the $80 fare includes dinner.
