If you're still mourning Tia Keenan's departure from Caselulla, then you might want to head over to the Brooklyn Kitchen on May 10: that's when the formidable fromager will be teaching a class on the seasonality of cheese. The two-hour class will explore the factors that contribute to the taste and texture of the lactic lovelies, and include tastings of cheeses made in 2009 and 2010.
