Serious barbecue meets Chipotle-style burrito production for a hybrid cuisine so good we can only describe it as "Tex-Mexcellent".

Thanks to pit master Mike Rodriguez, an alum of the revered Salt Lick BBQ in Driftwood, Texas, the brisket at this fast-casual Chelsea shop gets a minimum of 16 hours in the smoker. Sporting a generous pink smoke ring (the hallmark of good 'cue), the chopped chunks of deeply-flavored meat find their way into tortillas or else are enjoyed on their own as part of rice bowls, just like at Chipotle. Each item is run through the toppings gauntlet, and our favorite way to enjoy the fruits of Rodriguez and chef Sasha Shor's labor is with plenty of radish, crema, and pickled onions swaddled in a flour tortilla. Beyond guacamole (silky and touched by a smoky angel) and elote-style corn mixed with lime mayo and cilantro, our favorite brisket burrito filling is the chipotle-spiced yellow squash. Sweet and meaty, the soft gourd adds texture and heft to an already diesel burrito. Early on, there were reports of the meat not being able to stand up to such flavorful toppings, but in the months since this place opened, the kitchen has adjusted both the intensity of the smoker and the willingness with which employees dole out the various salsas, vegetables, and other accoutrements, yielding results as balanced as a Lone Star yoga instructor.
