What to Drink From Pegu's All-Stars Menu: The Sleeping Monk

The drink: The Sleeping Monk

The bar: Pegu, 77 West Houston Street

The price: $13

The ingredients: Chamomile-infused Scotch, Yellow Chartreuse, Benedictine, honey syrup, orange bitters, and lemon juice, shaken and served up.

The buzz: Call this one Intro to Scotch. Even the biggest peat-fearing brown liquor virgin will swoon at this refreshing, lightly sweet, and ever-so-slightly smoky concoction by bartender Kenta Goto. He starts by infusing the whiskey with what looks like granola but turns out to be chamomile and ends with a tiny star-shaped piece of apple floating on the drink's surface. The Sleeping Monk is part of Pegu's special fifth anniversary menu, featuring cocktails by such "All-Star" alumni as Phil Ward of Mayahuel, Jim Meehan of PDT, and St. John Frizell of Fort Defiance. Five years slinging drinks is, after all, something to celebrate.
