"The pop-up dinner: taking the dining experience in a new direction"
Jose Ramirez, sous chef from Isa in Williamsburg, started Chez Jose, a pop-up dinner project with the intention of bringing people together in a small, intimate setting. His weekly dinners have been held at the Whirlybird cafe in Brooklyn where he and Pam Yung, his girlfriend and the pastry chef at Isa, serve a vegetarian-forward $45 pre-fix dinner that is reservation-only (and serves a maximum of 20 people). Pop-up dinners are traveling dining establishments that aren't contained within the walls of a permanent restaurant or establishment. These dinners can be held anywhere and Chez Jose follows the "pop-up" philosophy by collaborating with different chefs, artists, and creative individuals.
