In The Spirit: Distilling Absinthe in a Harlem Basement

Kevin Herson has a unique use for his Harlem basement: an absinthe distillery. Fermenting tubs, herbs, hand-written labels, steal grinder, grain scale and all, Herson is the proprietor of Doc's All Natural Spirits, a yet-underground production line, inspired by 1920's prohibition laws and Belle ö‰poque culture.
