After reading The Sushi Economy by Sasha Issenberg, I will forever be skeptical of my sushi chef. Does he think I’m a fool? Also, where’s this tuna from, anyway? Canada? Spain? And when was it caught? Three days ago, five? Was it frozen?
The book is largely a study in economics, and unsurprisingly, some of those details were a little much for my teeny tiny brain, but my bottomless stomach, on the other hand, feasted on food history and the evolution of a cuisine.
