Bourdain and Batali’s Essentials



Mario Batali and Anthony Bourdain talk about the four essential ingredients for every home kitchen, and the two have very different ideas on the matter.

Batali’s list is pretty standard: extra virgin olive oil (EVOO in Rachel Ray’s world), anchovies, dry pasta, and some kind of tomato product, assuming you don’t have to count garlic, bread crumbs, and onions. “You really need those seven,” he says.

Bourdain has a far more efficient, if messy approach. “Just give me a pig in the freezer, a whole pig,” he says. Then, he just asks for some good sea salt and good black pepper.

Batali questions the man’s methods. “A pig in your pantry is kinda breaking the rules,” he notes. Yes, but that’s why we love Tony.
