Recipe: Easy Quinoa Salad


For this week’s featured recipe, we have a refreshingly easy dish with such relatively simple ingredients, you might not even need to trek out in the snow for a special trip to the store. Chef Hugo Trinquier from Nanoosh Mediterranean Hummus Bar, which recently opened a new UES location at 1273 First Avenue, was kind enough to share the recipe for the restaurant’s Quinoa Salad, after the jump…

Nanoosh Quinoa Salad

300 grams cooked quinoa
1 tablespoon of chopped cilantro
1 tablespoon of chopped parsley
1 tablespoon of chopped onion
1 tablespoon of chopped peppers
1 tablespoon of raisins
1 tablespoon of dried cranberries
 salt, olive oil and lemon juice to taste
Mix all ingredients together in a bowl, and refrigerate for an hour before eating.
