Sustainable? That’s so last week. The buzz word in food these days is traceability. Apparently, only five out of 40 foods is traceable, which means that seven of every eight things you put in your mouth could potentially be from a completely unknown source. A number of people and their companies are looking to fight this trend by launching initiatives to improve the traceability of certain foods. The New York Times reported on a flour maker’s effort to allow customers to meet the very farmer who produced the wheat in their flour bag.
