Even though Greek Orthodox Easter is 12 days later than the Roman Catholic version, preparations are already underway. The traditional recipe for lamb involves rubbing the exterior and body cavity with salt, lemon juice, olive oil, and oregano or thyme, depending on which island (or the mainland) you’re from.
