Looking perhaps a little too much like a pair of disembodied legs left behind by a serial killer, liver pudding is a specialty of the Deep South that can come in the form of a sausage or a cake. It contains liver, cornmeal, and, often, pig face parts, and is flavored with sage and red pepper. Of the product, one manufacturer exclaims: “…a favorite of kids, who love it on a sandwich or warmed in the pan for breakfast. By the way, it doesn’t taste like pudding and it doesn’t look like liver.” Though fully cooked, it needs to be reheated before eating.
