Alice Waters has had an awful lot of advice for pretty much everyone lately, and that includes Thomas Keller. BlackBook reports that the magniloquent and high-flown but (presumably) well-meaning Waters was at Per Se this weekend, and she did not seem to enjoy herself one bit. Apparently, Waters sent back a duck breast dish, saying it was over-salted, criticized a blue prawn dish for being over-salted, and told a maitre d’ exactly how she would have changed a vegetable preparation. A critic might wonder when was the last time Waters was in the kitchen at her own restaurant, Chez Panisse.
