Ryan Skeen is, in fact, leaving Irving Mill, as was rumored on The Feedbag. The Feed confirms that his last day of service is June 7. But Skeen isn’t going quietly. He’s enlisted the help of other pork-loving chefs–Porchetta’s Sara Jenkins, Annisa’s Anita Lo, and The General Greene’s Nick Morgenstern–for a pork fest of a meal to be held at the restaurant June 2.
John Tesar wasn’t too happy to have his dirty laundry aired on Eater, which reported that he chef at David Burke’s Fishtail was fired (and suggested that some harsh words from Frank Bruni may have had something to do with it.
But there’s more intrigue! In the wild world of internet commenting, you never know who is actually behind the keyboard. A commenter impersonating Tesar on Eater wrote: “Fuck y’all at eater,” adding, “Frank Bruni had nothing to do with it and I wasn’t fired… david Burke is washed up and I took the job knowing David treats his chefs like crap… I told David he’s not professional and I refuse to taint my resume with his crappy outfit and he … yelled about now having to find a new chef and then told me to just get the ‘fuck out’!!! that’s the facts assholes at eater.” Tesar strongly maintains that the comment was not made by him. He is going to Texas to open Tesar’s Modern Steak & Sustainable Seafood.
Luis Gonzales, who is responsible for the menu at Mayahuel, is bringing his Oaxacan-inspired touch to the kitchen at Death & Co, where he has replaced James Flak. Gonzales also continues to expand the menu at Mayahuel.
Daniel’s Dominique Ansel, Per Se’s Richard Capizzi, Gotham Bar & Grill’s Deborah Racicot, and WD-50’s Alex Stupak are among those to be honored at the Institute of Culinary Education for Dessert Professional magazine’s annual Top Ten Pastry Chefs in America awards. Previous winners have included Francois Payard and Jacques Torres.
