Oh Fie! European Union. According to an Op-Ed piece in today’s NY Times, the European Union is seeking to redefine the wine that all France loves to drink in the summer–rose, sometimes known in the States as blush. In Provence, where most of this lovely pink wine is produced, it’s made from red-skinned grapes, but this skin is removed from the fermentation vats very rapidly, so that it conveys the characteristic color, but none of the tannins normally associated with red wine. Under the new European Union rules, wines called roses could be produced by simply mixing reds and whites, which blows. Try it at home some time.
