Whiting has had a long history as fish of choice among African-Americans in New York, finding its most exalted expression in the whiting sandwich. In the excellent example shown above–found recently at Blue Ice Fish & Chips in Bed-Stuy–three crisp fillets come sandwiched between two slices of white.
