At the Greenmarket–Beans, Beans and More Beans

Bean season is in full swing at the Greenmarket now–find simple green beans; sweet, yellow wax beans; long, flat pole beans; and Italian Romano beans. Blanch beans and toss them with a vinaigrette for a simple salad, trim them and eat them raw as crudites with dip, cook them slowly with bacon and tomatoes, or toss them in soup.
