These stuffed mushrooms (“bharwaan” means “stuffed”) from Bhatti Indian Grill have more going for them that the butter-sodden Western version of the dish. Cooked over a very hot open fire, the fat mushrooms get soft and caramelized around the edges. The caps are stuffed with a thin smear of fresh cheese curds that melts into the mushroom juice that squirts out when you bite. The dish is served with a copious amount of mint chutney and a sprinkle of cilantro.
Stuffed vegetable dishes are generally very popular in India–stuffed okra, stuffed gourd, stuffed potatoes, stuffed eggplant, you name it. Best of all are the dried red chile peppers stuffed with coarse salt, which you fry quickly and eat for a snack. Hot!
